Vegan & Raw Lime Mousse Pie



I’m so happy to share this recipe with you today.
This yummy Lime Mousse Pie is so easy to make.
You can eat this dessert and feel like you are nourishing your body and your soul!

RECIPE:

Crust Ingredients:

2 Cups Raw Cashews
1 Cup Unsweetened Shredded Coconut
1/2 Cup Pitted Dates
2 Tsp Vanilla Extract
2 Tbsp Lime Juice
Dash of Salt
5 Tbsp Agave (You can use maple syrup)

Mousse Ingredients:

4 Large Ripe Avocados (Pealed and Pitted)
1/2 Cup Lime Juice
1/4 Cup Lime Zest (You’ll need 6-8 limes for this entire recipe)
1/2 Cup Agave (or maple syrup)
2 Tsp Vanilla Extract
Dash of Salt

Directions:

Place the crust ingredients in your food processor and blend until dough-like.
Spray your 8 inch spring form pan with non-stick cooking spray.
Using your hands press the dough evenly into the pan.
Place all mousse ingredients in your food processor and blend until smooth
(stopping occasionally to scrape down the sides).
Pour mousse over-top of crust.
Chill in your refrigerator or freezer (depending on your desired texture)
for at least 3 hours.
Cut and serve immediately.
