Vegan Chocolate Avocado Pudding

If you are a chocolate addict like me, than you have to give this one a try.


Serves 2

1 medium avocado
1/2 cup coconut milk
4-6 tablespoons pure maple syrup (more or less depending how sweet you want it)*
3 tablespoons unsweetened cocoa powder
2 teaspoons pure vanilla extract
2 pinches sea salt
2 tablespoons unsweetened coconut flakes (optional; for garnish)

Put all ingredients except the unsweetened, desiccated coconut into the bowl
of a food processor and process until smooth and creamy,
scraping down the sides of the bowl as necessary.
Transfer to individual serving dishes, top with coconut if desired,
and serve immediately.

  2. I've made a few versions of Chocolate Avocado Pudding, and this one beats them all! I use dark maple syrup, and I love the richness it brought. Thanks for the great recipe!
